Jell-O Jelly

Jelly from Jell-O

2 boxes (3 ounces each) gelatin, any flavor
1 box powdered pectin
31/2 cups cold water
41/2 cups sugar

In large pan, bring gelatin, pectin and water to rolling boil. Add sugar and bring to boil again. Cook for 1 minute. Skim; pour into hot, sterilized jars and seal.

Recipes that call for gelatin should not be frozen, or they may become thin after thawing. The freezing process separates the water from the gelatin, and the two do not combine again once the product is thawed. Such jellies can be stored in the refrigerator for up to 3 weeks.
