Mennonite Girls Can Cook: Pork-n-Beans

What a wonderful sharing of a fond memory and a great recipe!  Have you been to the Mennonite Girls Can Cook blog?  You are missing out on a lot of great additions  to your recipe files!

Home-Made Pork & Beans
  • Soak 3 cups of white beans over night. I switch it up with navy beans also.
  • Rinse and drain in the morning
  • Cover with cold water and boil for 15 minutes.
  • Drain
  • Drain again and put beans in earthenware bean pot or crock pot.
Add:
  1. 1/2 pound sliced bacon and mix between the beans, bottom, middle and top.
  2. 1 Tbsp. prepared mustard
  3. 2 sliced onions
  4. 1 Tbsp. brown sugar
  5. 1 Tbsp. salt
  6. 2 Tbsp. molasses
  7. 1 Tbsp. ketchup
  8. 1 tsp. ginger
Cover with fresh water (boiling) and bake with cover on for 4-5 hours in slow oven (275 - 300 degrees). Long and slow baking is the secret to good baked beans.
