Chicken Corn Chowder, with Sweet Potatoes

Autumn and winter mean a lot of soups and stews around here :-)
 
7 c milk
1 17oz box of corn muffin mix

Blend together till smooth and set aside

In 5 Tbs butter, sauté:
2 1/2 c diced onions
5 or more cloves of garlic, minced

Cook until soft, then add:
1/8 tsp cumin
5 quarts chicken broth
4# cooked chicken pieces, cut as desired for soup
5 medium sweet potatoes, cut as desired for soup
3 cups Monterey Jack cheese
7 cups frozen corn (really any will work)
Salt and pepper

Bring all to a boil, then reduce and simmer until potatoes are tender. Stir in milk/muffin mix and blend, stirring, for 10 mins. Add cheese and corn, salt and pepper.

No Peek Chicken

1 box Uncle Ben's Long Grain and Wild Rice with Herbs
1 can cream of mushroom soup
1 can cream of celery soup
1 can cold water
1 tsp parsley
1 chicken -- I'm using what I have, which is 5 chicken breasts
1 pkg Lipton Onion Soup mix

Lightly grease casserole dish. Mix rice, soups, water and parsley in dish and top with chicken. Sprinkle Lipton soup over all.
Seal with foil (I don't like to use foil, but I will place a small cookie sheet upside down over the casserole -- which will be my lasagna pan anyway).
Bake @ 350 for 2 1/2 hours.

Four Chicken Recipes

Here are four chicken recipes including autumn chicken bake, chicken and stuffing casserole, chicken and noodles, and healthy chicken salad wrap.

Autumn Chicken Bake

Ingredients:

2 pkgs. (10 oz.) frozen broccoli spears, slightly thawed.
6 cooked boneless skinless chicken breasts
Salt and pepper to taste
½ C. butter or margarine
1 (8 oz.) pkg. cream cheese
½ C. mayonnaise

Directions:

Preheat oven to 350 degrees F. place broccoli in a 9 x 13 inch casserole. Arrange chicken on broccoli. Sprinkle with salt and pepper. Melt butter or margarine in a medium skillet over medium heat. Stir in remaining ingredients. Heat, stirring frequently, until the cheese is melted and the mixture is smooth and creamy. Pour over chicken. Bake 35 minutes until bubbly and broccoli is tender crisp.

Quick and Easy Chicken Stuffing Casserole

Ingredients:

1 box chicken flavored stuffing mix
1 1/4 cup hot water
1/4 cup butter
4 boneless skinless chicken breasts
1 can condensed cream of mushroom soup
1/3 cup milk
paprika and pepper

Instructions:

Mix together stuffing crumbs, season packet from stuffing mix, water and butter. Put chicken in a greased baking dish and sprinkle lightly with paprika and pepper to your liking. Use a small bowl to blend together milk and condensed soup and then pour it over the chicken. Scatter stuffing on top of chicken. Cover and bake at 375 degrees F for 35 minutes or until chicken is no longer pink and juices are clear.


Favorite Family Chicken & Noodles


Ingredients:
4-5 pieces of chicken (chicken breast preferably)
4 carrots, sliced
1 small onion, chopped
2 cups water
4 chicken broth cubes
1 tsp garlic salt
1 lb egg noodles
salt & pepper


Instructions:
Add carrots to your crock pot, then add chicken, onion, water, cubes and spices (leaving out the noodles). Turn the crock pot on low and cook for about eight hours.

When almost ready, cook egg noodles according to package instructions. While the noodles cook, take chicken pieces out and cut into child-friendly, bite-size pieces. Place chicken pieces & cooked noodles in the crock pot.

If needed, mix cornstarch, water and a bit of broth together and add to your chicken and noodles to thicken.

Enjoy!



Healthy Chicken Salad Wrap

Ingredients:

2 – 3 medium flour tortillas
2 cooked chicken breasts, diced
¼ cup red and yellow bell peppers, diced
1 celery stalk, diced
1 tbsp mayonnaise
1 tbsp plain yogurt
¼ cup cheddar cheese, cut into small cubes
Salt and pepper to taste


Instructions:
Add chicken, cheese, mayonnaise, yogurt, bell peppers and celery into a bowl and mix well. Add salt and pepper.

Warm tortilla slightly to make it easier to fill. Place ½ - 1 cup of chicken filling on top of the tortilla and wrap.

Enjoy tortilla in your lunchbox instead of a sandwich.

Chickn Bruschetta

A wonderful online Sister shared this recipe on her blog some time back and it just looks so yummy it has to be tucked away here so we can make it ourselves.

Chicken Bruschetta!

4 chicken breasts (boneless)

1 pkg turkey stuffing (I use the herb seasoned stuffing)

1 10.5oz can of diced tomatoes (drained)

1/2 cup water

4 cloves garlic (minced)

1 TBSP crumbled basil ( I use about 3TBSP)

1 C. Mozarella (shredded)

1.Mix stuffing, tomatoes, garlic and cloves together and set aside.

2.Cut chicken breasts into bite sized chunks and put in bottom of oiled 9x13 casserole dish.

3.Sprinkle basil evenly over chicken.

4. Sprinkle all Mozarella evenly over the top of chicken/basil.

5. Top it all with the stuffing mixture.

6. Bake at 400 for 30 minutes or until chicken is cooked through.

Serves 6

Chili Chicken Casserole

Chili Chicken Casserole

1 cup sour cream
1/2 cup ricotta cheese
3 oz cream cheese

3 cups cooked chicken, chopped
3 cups cooked rice
1 1/2 cups shredded Monterey Jack cheese
4 oz diced green chilies
15 oz can chopped tomatoes
15 oz can black beans (drained)
1/2 tsp. garlic salt

1 cup crushed tortilla chips

Mix together the sour cream, ricotta cheese, and cream cheese.

Add everything else except the tortilla chips and blend together. Pour into ungreased shallow 9"x13" pan. Top with tortilla chips.

Bake at 350 for 30 minutes.

Crispy Baked Chicken Breasts

Baked Crispy Chicken Breasts

1/3 cup bread crumbs
1/2 tsp dried parsley
1/2 tsp garlic powder
1/4 tsp garlic salt
2 tsp balsamic vinegar
2 egg whites
2 boneless skinless chicken breasts
salt and pepper to taste

Mix the bread crumbs, parsley, garlic powder and garlic salt in a pie pan or other flat dish. Whisk together the egg whites and vinegar in another pie pan. Spray a cookie sheet with cooking spray.

Dip the chicken into the vinegar and egg white mix, then the bread crumbs. If you like it extra crispy, dredge the chicken in flour, then dip in the egg mix, then the bread crumbs. Press the bread crumbs in. Lay the chicken pieces on the cookie sheet, spray with the cooking spray, and salt and pepper to taste.

Bake at 400 for 25-30 minutes.
