After scouring recipes from the myriad of amish ccokbooks and scribbles from amish and mennonite friends recipes, KatieAnne, turning 7 tomrrow, chose this for her birthday cake. Sounds like a good one to me...I love Reese's Peanut Butter Cups. Chocolate and peanut butter. What's not to love about that?
Cake:
2 c flour
2 c sugar
1 tsp soda
1/2 tsp salt
2 beaten eggs
1 tsp vanilla
1/2 c buttermilk or sour cream
2 sticks oleo
1 c water
3 Tbs cocoa
1 1/2 c peanut butter with 1 tsp olive oil.
Frosting:
1 stick oleo
2 Tbs cocoa
1/3 c milk
1 tsp vanilla
2-3 c powdered sugar
Melt oleo, water and cocoa. Add to dry ingredients and beat well. Grease and flour 9x13 pan. Pour in batter and bake at 350 for 25 minutes or until tests done. Cool completely -- very important.
Spread cake with 1 1/2 c peanut butter blended with 1 tsp olive oil.
Blend frosting -- melt oleo cocoa and milk. Bring to a boil. remove from heat and add in vanilla and powdered sugar. Blend to smooth. Frost cake.
