Pumpkin Spice Pancakes -- Modest Handmaidens

I stumbled upon a delicious recipe earlier today and want to keep it tucked away for making again. I was checking out aprons over at Modest Handmaidens and checked out their recipe files. YUM!

With autumn nipping at our heels, what's better than pumpkin recipes?!

Wholesome & Healthy Pumpkin Spice Pancakes

4 c. wholewheat flour (if you mill your own wheat, use 2 c. hard red winter wheat & 2 c. hard spring white wheat)
2 tsp baking soda
4 tsp baking powder
1 tsp natural salt
1/2 c. flax seed, ground
1 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp allspice

* Combine dry ingredients and set aside.

1/4 c. olive oil
4 eggs
4 1/4 c. milk or soymilk
1 c. pumpkin, mashed

*Combine wet ingredients in second bowl and add to bowl of dry ingredients, mixing until just moistened.
*Pour onto hot griddle in desired pancake size and turn when bubbles start to form.
* These pancakes freeze very well for a last minute nutritional breakfast on those cold fall or winter mornings. Just thaw and reheat in oven or microwave
Makes apx 12- 6" pancakes
