Quick Breads: Applesauce, Pumpkin Raisin, Pumpkin

Applesauce Snack Cake
This recipes comes from Maidens of Worth and is absolutely delicious. We make ours with either smooth or chunky applesauce and use Prairie Gold flour. I couldn't find it on their blog now, but I know it's there somewhere!

23 oz applesauce
1/2 cup + 2 Tbs butter
1 1/2 cups quick oats
1 1/3 cups brown sugar
3 large eggs
1 1/2 tsp. vanilla
2 1/4 cups flour
2 1/2 tsp baking soda
1 1/2 tsp cinnamon
3/4 cup raisins.

Heat applesauce and butter in pan until melted, stirring often. Stir in oats and let stand off heat.
Beat sugar, eggs and vanilla. Add to oat mixture.
Sift in flour, soda and spices. Stir just enough to mix. Fold in raisins.
Pour into greased 9x13 pan and bake @ 350 for 35-40 minutes.
Cool and cut in to 24 bars.


Raisin Pumpkin Snack Cake
This comes from The Budget newspaper, Cooking with Maudie, several years back.

4 eggs
2 cups pumpkin
2 cups flour
2 tsp baking soda
1/2 tsp nutmeg
1 cup sugar
2/3 cup raisins
1 cup brown sugar
3/4 cup butter, melted
1/2 cup nuts, chopped (optional)

Beat eggs. Stir in pumpkin. Combine all other ingredients and mix together well.
Bake in greased 9x13 pan @ 325 for 25-30 minutes.


Pumpkin Bread
Not sure where this one came from. I've had it for years. We made this because I buy large cans of pumpkin and still had a cup and half left over to do something with :o)

1/2 cup butter, softened
2 eggs
1 cup pumpkin
2 cups flour
1 cup brown sugar
1/2 cup raisins
1/2 cup chopped pecans or walnuts (optional)
1 1/2 tsp pumpkin pie spice
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt

Beat butter until creamy. Add eggs one at a time beating well each time. Add in pumpkin, mixing well. Add dry ingredients and mix just enough to blend.
Pour into greased 8x4 loaf pan and bake @ 350 for 50-55 minutes. Cool on rack for 15 minutes, then remove from pan and cool completely.
