Homemade Pudding Mix

These delicious recipes are from Creative Homemaking. Sounds like a great pantry addition as well as a great gift jar mix!

Chocolate Pudding Mix (serves 24)
3/4 cup powdered milk
7/8 cup cornstarch (that's 1 cup minus 2 Tbs)
1 1/2 cup sugar
3/4 cup cocoa powder
1/4 tsp salt, rounded
Blend all together well and store in quart jar.
To make:
Blend 2/3 cup mix and 2 cups cold milk.  Stir well and heat to boiling. then simmer while stirring until thickened.  Cool and serve.



Vanilla Pudding Mix (serves 32)
1 1/4 cup powdered milk
1 1/4 cup cornstarch
1 5/8 cup sugar
1/4 tsp nutmeg
3/8 tsp salt
Blend well and store in quart jar.
To make:
Blend together 1/2 cup mix and 2 cups cold milk.  Heat to boiling and simmer while stirring until thickened.  remove from heat and stir in 1/2 tsp vanilla (we also stir in a tablespoon of butter)  Cool and serve.
